Every year on Christmas morning, Dad would get up, make sure the fire was ready, that all the Santa stuff was good to go, make coffee from grown ups and hot chocolate for Casey and I- all while Mom got her makeup on. THEN, Case and I could get out of bed. After present fun, came the one thing I remember most about Christmas morning, every single year, Christmas Frittata. It's a recipe from my Aunt Diann, and it's super yummy. Maybe it's so yummy because we only ate it once a year, but still, it was yummy. When Kevin and I got married, I started making it too, only on Christmas morning, of course. Kevin looks forward to it and teases me that I only cook breakfast that one day a year (I cook breakfast, but usually only for dinner). I've forgotten an ingredient here and there, one year the milk was sour, but we've always managed to have something close.
Here's the recipe if you're interested
6 eggs
1 cup milk
1 green onion, chopped
2 tablespoons butter, cut into small slivers
1/2 teaspoon of salt (see this Jordan, read carefully)
1/8 teaspoon of pepper
4 oz of shredded cheese
crumbled bacon
Preheat oven to 400*. Grease 9x9 pan or a pie plate. In medium bowl, with a whisk, beat eggs, milk, green onion, butter, salt and pepper until well blended. Pour into pan. Sprinkle with cheese and bacon. Bake 20 minutes or until brown.
We like to have biscuits or crossiant rolls with it too. Enjoy!

Jeri- did who start what tradition? The fritatta was my family's tradition.
I read it was your family's tradition and that it was your Aunt's recipe. I didn't know if it was a special Christmas dish with your Aunt too, or simply a frittata recipe of hers that your Dad liked and chose to make you guys for Christmas. You were lucky girls to get such a treat on Christmas morning.
Oh, I get it now. Mom made the fritatta. I'll have to ask why that was picked.
